2, Dashi (cooking stock)

Dashi (cooking stock) is a basic of Japanese cuisine, which shape almost everything of Japanese food. Japanese people has been familiar with this cooking stock for long time, ever since Japanese history begun.

 

There are several types of cooking stock, but there are 2 types of cooking stock that shapes Japanese cuisine; Katsuo (bonito fish) and Konbu (seaweed).

Most of the time, “Konbu” is used for simmered dish, and “Katsuo” is used for miso soup or a soup for noodles.

Dashi is a soup made of dried fish or seaweed simmered, and that the taste of Japanese cuisine depends on how good the dashi is.

 

 

3, Fermented Food

Soy Sauce, Miso, and Sake (Cooking Wine) are essential ingredients for Japanese food. Those are all fermented food.

 

Natto (fermented soybeans) and Tsukemono (pickled vegetables) are both popular dish of typical Japanese food.

 

Fermented foods help human body to digest and absorb important nutrition. Also, fermented food is resistible of molds, which protect food from spoiling fast. Furthermore, matured and aged food will have deeper taste.
